Q: What is
a
"CSEP"?
A: Thomas Caterers of
Distinction is the only caterer in the state to
have Certified Special Event
Professionals (CSEP) on staff. In fact,
there are only seven CSEPs in the entire state
and four of them are with Thomas Caterers or
Distinction.
The CSEP designation is the hallmark of
professional achievement in the special events
industry. It is earned through education,
performance, experience, and service to the
industry. It is this professionalism and
expectation of excellence that distinguishes
Thomas Caterers of Distinction as one of the
nation's top caterers.

Each year, Thomas
Caterers of Distinction produces many
wonderful catered events that we are very
proud to call our own. That is exactly the
reason why we document all of the fabulous
events and submit them to award programs
sponsored by ISES (International Special Events
Society). Thomas Caterers of Distinction
has been a member and very involved in the
leadership of the Indiana chapter since
2000.
We have entered
and won many local PACE
(Professional Achievement in Creative Events)
Awards from 2000-2006 for Best
Team Effort, Best Catered
Affair, Best Themed Décor and
Best Achievement in Logistics. The
PACE Awards ceremony is held annually in March
in Indianapolis. We are proud to announce that
at this year's event, we won in all six of our
nominated categories. In 2006 Thomas Caterers of
Distinction was also voted Readers'
Choice
Award Finalist for
Best Caterer in Indianapolisby
Indianapolis
Woman magazine and nominated for an
international CATIE
Award from the International
Caterers Association for Best Mixology.
We have also been privileged enough to win two
international Esprit
Awards for Outstanding Off
Premise Catering. This prestigious award
is presented annually at the ISES
Eventworld conference each August. This
year's ISES Eventworld conference will be held
in Montréal, Canada.
It is because of
our high standards, cutting edge menus,
quality service and attention to
detail, that we have become the most nationally
recognized catering company in Indiana. Co-owner
and General Manager, Kelly Early, CSEP, is proud
of her company's accomplishments. "We pride

Recipe of the
Month
At Thomas Caterers of Distinction,
we make all our food
from scratch. We are proud to share
some of our
time honored recipes with our
friends.
Thomas's Famous Carrot
Souffle
1 pound
Carrots
½ cup
Sugar
1 teaspoon Vanilla 4 ounces
Butter
3 tablespoons
Flour
Salt (to taste) 3
Eggs
1 teaspoon Baking Powder
1. Peel carrots. Cook in salted water
until well done. Drain well. 2. Melt
butter. 3. In a blender put eggs, melted
butter, sugar, flour, baking powder and vanilla.
Blend well. Add carrots. Blend until mixture
resembles a milkshake. 4. Cook in an 8"x8"
greased glass dish at 275 degrees for 45 minutes
or until just firm. |

I
heard an interview with American Idol icon,
Simon Cowell, in which he was asked why he
is such an expert at finding talent. His
answer was simple, "I'm good at guessing what is
going to be popular".
As
event designers we are always being asked to come up
with the next hot thing.
My
best guess is that interesting and interactive
food presentations are only going to
get bigger and more elaborate. The old
adage of "less is more" is giving away
to "MAXIMIZE!!!"
The more details
you can include that are in keeping with the
theme of your food station, the better you will
have maximized the impact on the guest.
Start with a large concept and keep adding to it
with smaller and smaller details until you have
the complete look.
Think
outside traditional silver serving tray and use
interesting and unique items such as
picture frames,
mirrors, shadow box, flowerpots,
unique plates or baskets, vases, furniture,
board games, screens, chalkboards, granite,
hat boxes, suitcases, wheat grass,
rocks, etc.
Always
remember to be careful to insure you
are using
food safe surfaces and/or containers,
especially if the food will be in direct
contact with the object. If you're not sure,

can help.
