Our carrot soufflé is one of our most well-known side dishes. It is bright, delicious and perfect for adding a pop of color to any plated meal. It is an alternative way of serving carrots and adding a vegetable side item. Whether served in a decorative ramekin or artfully placed directly on your plate, our carrot soufflé brightens up plate presentation during the summer and it is the perfect combination of home-style warmth and sweetness for the winter. Clients love our carrot soufflé so much they have prepared it themselves for family functions during the holiday season. Because of the high demand, we have even added it to our Holiday Express Menus. Whatever the occasion we thought we would share the recipe for your enjoyment:
12 ¾ oz. Solid Carrots
3 ¼ oz. Butter
2 ½ Eggs
½ Cup Sugar
¼ Cup Flour
¾ Teaspoon Baking Powder
¾ Teaspoon Vanilla-Pure
Salt to Taste
Peel Carrots. Cook until well done. Drain well.
Melt butter. In blender- carrots (blend well). Mix in dry mixture-eggs-butter.
Blend until mixture resembles a milk shake.
Bake in 8"x8" greased pan at 275F for 45 min. (until just firm)
